"Calissons d'Aix-en-Provence" Since the 15th century, the Calisson has been a specialty of Aix -en-Provence, a city in the South of France with a profound history of Culture, Food and Architecture. Traditionally, the Calisson is made from a paste of ground and candied melon and almonds, shaped into a flat diamond and topped with royal icing. In #ghayaoliveira and #jaycebaudry interpretation, you will recognize the iconic tapered almond shape and flavor of melon, which they enhance with a light melon-almond sorbet, orange coulis and fine meringue, scented with Luberon spices from @la_boite ; a blend of lavender, basil and fennel which also has origins in Provence. @lerouxeddy
