The executive chef of a Lincoln Park seafood hotspot recently shared his tuna salad secrets on an afternoon news broadcast. Matthew Kirkley, of L20, was featured last week on WGN Lunchbreak. He offered tips on how to pick the best, most sustainable tuna, as well as a recipe for a "Simple Tuna Salad" topped with avocados and a clementine vinaigrette. Really what it comes down to is just knowing who you're buying things from even if it's just as simple as talking to your supermarket counter fish guy," Kirkley said. "They should be able to at least give you a point of origin ... where you can track your fish back." L20 is at 2300 N. Lincoln Park West. The restaurant's cuisine "reflects a repertoire of new and traditional cooking methods, exploring the intricacies of fish and shellfish in artful compositions," according to its website. It's located in the historic Belden-Stratford building adjacent to Lincoln Park. The L20 wine director was recently among those named as the "next generation of food-industry rock stars" in Zagat guide's "30 Under 30" list.
