AN EVENING WITH WINEMAKER CASEY McCLELLAN

On Wednesday, January 20, dine with Casey McClellan, the founder and winemaker of Seven Hills Winery for our monthly Tree Room dinner. A fourth-generation vintner, Casey worked alongside his father in the early 1980s, planting Walla Walla Valley's distinctive Seven Hills vineyards -- a site that has gained recognition as a leader of the Pacific Northwest's “grand cru”
properties and officially designated an American Viticultural Area.

As its winemaker, Casey guided Seven Hills, creating wines that have become the benchmarks for excellence in the Pacific Northwest. Celebrated for its Bordeaux-like red wines, Seven Hills has bottled more vineyard-designated Cabernet Sauvignons and Merlots from its region than any other winery.
At the same time, it has pioneered the area’s rich diversity,
producing other stellar red and white wines.

The evening encompasses a progression of five courses, each specially created by Chef Gras to complement the rich diversity found in Seven Hills’ wines.

Les fraises Sarah Bernhardt d’Escoffier chez Benoit Paris « Rendre hommage au plus grand cuisiner français du 19e, c’est un devoir de mémoire » nous raconte Eric Azoug, le chef du restaurant Benoit. Cet été les clients du restaurant pourront découvrir un dessert d’Auguste Escoffier : « Les fraises Sarah Bernhardt ». Inspiré par la célèbre comédienne, ce dessert est une petite merveille de douceur et de fraîcheur...
