Much of the design inspiration in the dining room came from the continental dining rooms of the early 20th century. One aspect of such dining rooms from this era is that of table-side preparations. We wanted to tie that inspiration and style into our cocktail service at L2O. As a result, we have a multitude of house cocktails and we prepare all of them in front of the guest at the table. We bring all of the mise en place to the dining room, set it on a gueridon adjacent to the table and prepare each drink from start to finish. The idea behind table-side cocktail service is to be able to shake, or stir the drink in front of the guest and serve it immediately before it begins to lose its effervescence. The most integral part of the shaking is, of course, the shaker. The question that we get every evening is "where did you get that cocktail shaker?" Well, here is the answer, it was designed for Alessi by Ron Arad and it is called the Chiringuito Shaker.
